With the @DiFUMA still and your food processor like the Thermomix®, Monsieur Cuisine®, or Bosch Cookit® you can easily make this delicate Rosemary-Lavender-Citrus Hydrolate.

Production of Rosemary-Lavender-Citrus Hydrolate
Ingredients:
- 1–2 handfuls of fresh rosemary sprigs
- 1/2 tsp dried lavender blossoms (organic)
- Peel of ½ organic lemon (thinly peeled, little white pith)
- 1 liter water
1. Add 1 liter of water or distilled water to the mixing bowl of the Monsieur Cuisine® or Thermomix® and Bosch Cookit®.
Fill the steaming basket with the ingredients from above.
Recommendation: Briefly wash the rosemary to remove dust and small creatures.
2. For the production of a hydrolate rich in essential oils, it is recommended that the steaming basket is well filled but loose, to ensure that the steam can properly penetrate the needles, blossoms, and lemon peels to optimally extract the essential oils.
3. Also important: for dried botanicals, lightly moisten them!
4. Place the lid with the still (@DiFUMA) and start as per the instructions, depending on which food processor you have.
5. After 15/20 minutes, the hydrolate drips into the collection vessel.
✨ Additional tip
For an even more intense aroma, you can let the finished hydrolate infuse with a fresh rosemary sprig for 24 hours – then remove it.
This will make the scent rounder and give it an elegant herbal warmth.
Good to know:
- Store hydrolates in dark, cleaned glass containers.
- Ideally use glass containers with spray heads to minimize oxygen ingress.
- Keep hydrolates cool at 9 to 14 °C.
- Without preservatives, hydrolates can last from 6 months to 2 years. Regularly check for cloudiness or mold.
- The bottle should be shaken vigorously before use, so that the oils mix with the water.
